Recipe: Apple Walnut Salad
Ingredients:
– 1 large bunch of large spinach leaves, torn (or one bag baby spinach)
– 1/4 cup walnuts
– 1 granny smith apple, cored and cut into small cubes
– Cheese of your choice. Chevre works well here, as does sharp cheddar and hard cheeses like Parmesan.
– 1/4 cup cranberries (optional)
Directions:
Toss ingredients in a bowl and top with your favorite vinaigrette.
Recipe: Broccoli and Quinoa in Carrot-Ginger Sauce
Ingredients:
1 1/2 cups quinoa
I large head broccoli, chopped (or one 10 oz bag)
2 medium tomatoes, chopped
3 1/8 cups of water
1/2 ts salt
Carrot-Ginger Sauce:
1 large carrot, chopped
3 tablespoons peeled fresh ginger, finely chopped
3 tbs water
3 tablespoons vegetable oil
2 tablespoons seasoned rice vinegar
2 teaspoons soy sauce
2 teaspoons sesame oil
1/4 ts salt
Preparation:
Rinse quinoa under cold running water before adding to a pan with 3 cups of water and 1/2 ts salt. Heat to boiling, then reduce heat to a simmer and cover for 15 minutes. Add broccoli and a splash of water if all is absorbed and cover for another five minutes. Add sauce ingredients together in the blender, blend until pureed. Toss quinoa, broccoli, sauce and chopped tomatoes. Serve warm or at room temperature.
Recipe: Berry Crisp
Ingredients:
— 6 cups /24 oz. of your favorite berries
— 1/4 cup date sugar
— 1 cup all purpose whole wheat flour
— 1 tbsp lemon juice
— 3/4 cup rolled oats
— 1/2 cup maple syrup
— 1 tsp cinnamon
— 1/2 tsp ground ginger
— 1/4 tsp salt
— 1/4 tsp nutmeg
— 6 tbsp diced organic unsalted butter, refrigerator temp
Preparation:
Preheat oven to 375°F. In a large bowl mix the berries, date sugar, 1/4 cup flour and the lemon juice. Pour mix into 9" glass pie pan. Combine the remaining ingredients in a mid size bowl. Cut in organic butter or blend it in with your hands till small crumbly balls form. Dust onto berry mix.
Bake for about 1 hour or until the top is golden and the berry mix comes to the surface through in thick gooey bubbles. Set out to cool for 15 minutes. Enjoy alone or with a frozen fruit glaze.
